Doyle's Smoke Yaad, in Depth

The reason to walk into Doyle's Smoke Yaad is the smoke itself. This is a wood-fired barbecue kitchen in Placencia Village, on the Placencia Peninsula in Belize's Stann Creek District, and the smell of it carries across an open-air garden that sits right on the lagoon. You do not come here for a dining room. You come for what comes off the fire.

From a Yard to a Standing Restaurant

The place started the way a lot of good food does: someone had time on their hands and a fire to tend. Doyle Gardner, a local tour guide whose surname also turns up spelled Gardiner, began cooking barbecue in his yard during Belize's COVID-19 shutdown. It grew from there into a standing restaurant, keeping the backyard bones the whole way. The name says it plainly. This is a smoke yard, not a remodel of one.

It runs as a family operation. The owner's mother and aunts help prepare and serve the food, which is part of why the pace here is unhurried and the plates come out looking like a family meal rather than a line cook's output.

What to Order

Reviewers consistently point to the same handful of plates, and they are the ones built on the fire. The smoked brisket and the pulled pork are the anchors. Ribs hold their own next to them. When lobster is in season, it comes grilled with garlic butter, and smoked fish shows up as the local counterpoint to the pork and beef. Whatever you order, the potato salad on the side gets named again and again.

The Setting

Seating is picnic tables and hammocks under the open sky, with the lagoon at the edge of the garden. It is a bring-your-own-beverage setup, so plan for that before you sit down. The whole thing is casual by design: garden, hammock, plate of smoked meat, no pretense.

More Than a Kitchen

Doyle keeps more than one fire going. He also runs a tour operation, DTOURZ, and hosts a coconut-and-cashew cooking class at the same backyard hearth where the barbecue is made. So the address does double duty: a place to eat, and a place to learn a bit of local cooking if that is what brought you to the village.

The kitchen shows up around town, too. Doyle's Smoke Yaad takes part in the annual Placencia Restaurant Week and has turned up at the Placencia Christmas Market, which is a fair sign it is woven into the village's food calendar rather than sitting off to the side of it.
